Ingredients:
• 2 cups of cooked jasmine rice
• 1 pound of beef (sliced thinly)
• 2 tablespoons of vegetable oil
• 3 cloves of garlic (minced)
• 1 red chili (sliced)
• 1 cup of fresh basil leaves
• 1 tablespoon of soy sauce
• 1 tablespoon of oyster sauce
• 1 teaspoon of fish sauce
• salt and pepper to taste
• 1 egg (optional)
Instructions:
(i) Begin by cooking
your rice according to the package instructions. Once done, set it aside to
cool.
(ii) In a wok or large
frying pan, heat the vegetable oil over medium-high heat. Add in the minced
garlic and sliced chili, and cook for about 30 seconds until fragrant.
(iii) Add in the thinly
sliced beef and cook until it turns brown and is no longer pink.
(iv) Once the beef is
cooked, add in the cooked rice, soy sauce, oyster sauce, and fish sauce. Mix
everything and stir-fry for a few minutes until the rice is heated through.
(v) Finally, add in the
fresh basil leaves and stir-fry for an additional 1-2 minutes until the leaves
are wilted.
(vi) If desired, you can also
crack an egg into the wok and stir-fry until it is cooked through.
(vii) Season with salt and pepper
to taste, and serve hot.
B. Beef Panang Curry:
The dish is supposed to have
originated in Thailand's southern area and was named after the Malaysian island
of Penang. Beef Panang Curry is a traditional Thai meal with rich and spicy flavors.
This is a popular Thai and international meal.
Full Recipe of Beef Penang Curry:
Ingredients:
• 1 pound of finely sliced beef
• 1 can of coconut milk
• 1-2 teaspoons Panang curry
paste
• 1 red bell pepper (sliced)
• 1 tablespoon brown sugar
• 1 tablespoon fish sauce
• 1 tablespoon lime juice
• 1 tablespoon vegetable oil
• 1 tablespoon fresh basil leaves
(optional)
• Salt to taste
Instructions:
(i) Heat the vegetable oil in a
wok or big frying pan over medium-high heat. Cook for 1 minute, or until the
Panang curry paste is aromatic.
(ii) Add the sliced meat and
stir-fry until it becomes brown and is no longer pink.
(iii) Stir in the sliced red bell
pepper and cook for a further 2-3 minutes, or until the pepper is somewhat
softened.
(iv) Pour in the coconut milk and
whisk everything together. Bring the mixture to a boil, then lower to medium-low
heat and continue to cook for about 10-15 minutes, or until the sauce has
thickened and the meat is thoroughly cooked.
(v) Whisk in the brown sugar,
fish sauce, and lime juice. Stir until the sugar is completely dissolved.
(vi) Finally, if preferred, add
some fresh basil leaves and season with salt to taste.
(vii) Serve immediately with
steaming rice.
C. Yellow Curry with Potatoes and Carrots:

Ingredients:
• 1 pound of chicken or beef,

• 1 can of coconut milk
• 2 tablespoons yellow curry
paste

(v) Add the coconut milk and
whisk everything together. Bring the mixture to a boil, then lower to medium-low
heat and continue to cook for 10-15 minutes, or until the veggies are tender
and the sauce has thickened.
(vi) Combine the fish sauce and
brown sugar in a mixing bowl. Stir until the sugar is completely dissolved.
(vii) Finally, season to taste
with salt and pepper.
(viii) Serve immediately with
steaming rice.
D. Chicken Satay with Peanut Sauce:

Ingredients:
• 1/2 cup coconut milk
• 1-pound boneless, skinless
chicken breasts (cut into thin strips)
• 2 teaspoons of soy sauce
• 1 tablespoon of brown sugar
• 1 tablespoon of curry powder
• 1 tablespoon of vegetable oil
• 1 chopped garlic clove
• Salt and pepper to taste
• Wooden skewers (soaked in water
for 30 minutes)
For
the peanut sauce:
• 1 pound of peanut butter
• 1/4 cup coconut milk
• 2 teaspoons soy sauce
• 1 tablespoon brown sugar
• 1 tablespoon lime juice
• 1 chopped garlic clove
• 1/4 teaspoon red pepper flakes
(optional)
Instructions:
(i) Whisk together the coconut
milk, soy sauce, brown sugar, curry powder, vegetable oil, minced garlic, salt,
and pepper in a large mixing basin.
(ii) Stir in the chicken strips
until they are well covered with the marinade. Refrigerate for at least 30
minutes, or up to 2 hours, after covering the bowl with plastic wrap.
(iii) Prepare the peanut sauce
while the chicken is marinating. Combine the peanut butter, coconut milk, soy
sauce, brown sugar, lime juice, chopped garlic, and red pepper flakes (if
using) in a small pot. Cook, stirring constantly, over medium heat until the
sauce is smooth and well-cooked. Set aside after removing from the heat.
(iv) Preheat your grill or grill
pan over medium-high heat. Thread the chicken pieces onto the skewers, spacing
them evenly.
(v) Grill the chicken skewers for
about 2-3 minutes on each side, or until cooked through and slightly browned.
(vi) Serve the Chicken Satay
immediately, with the peanut sauce on the side for dipping.
