Flavorful Italian Beef Stew and Beef Sandwich Recipes

Ingredients:

 

a. 2 lbs. beef roast (chuck roast or bottom round)

b. 1-quart beef broth

c. 1 cup of water

d. 1 box Italian dressing mix

e. 1 tsp. dried oregano

f. 1 tsp. dried basil

g. 1 tsp. garlic powder

h. 1 tsp. onion powder

i. Season with salt and pepper to taste.

j. 4 to 6 Italian bread rolls

k. (Optional) sliced provolone cheese

l. Giardiniera (optional Italian pickled vegetables)

 

Instructions:

 

I. Combine the beef broth, water, Italian dressing mix, oregano, basil, garlic powder, onion powder, salt, and pepper in a slow cooker. Combine thoroughly.

ii. Turn the beef roast in the slow cooker to coat with the seasoned mixture.

iii. Cook for 8 to 10 hours on low heat or 4 to 6 hours on high heat, until the meat is soft and easily shredded.

iv. Take the steak out of the slow cooker and shred it with two forks.

v. Reserve the cooking liquid from the slow cooker for dipping.

vi. Turn the oven to broil.

vii. Place the Italian sandwich rolls on a baking pan and cut them in half. Broil the rolls until they are gently browned.

viii. Fill each roll to the brim with shredded meat. Top with sliced provolone cheese if desired.

ix. Return the sandwiches to the oven for a few minutes more, or until the cheese is melted and bubbling.

a. 2 lbs beef stew meat, cut into cubes

b. 2 tbsp of olive oil

c. 1 chopped onion

d. 2 garlic cloves, minced 2 carrots, peeled and sliced 2 celery stalks, sliced

e. 1 can (14 oz.) chopped tomatoes

f. 1 cup red wine 4 cups beef broth

g. 1 teaspoon thyme dried

h. 1 teaspoon rosemary dried

i. Season with salt and pepper to taste.

j. 1/4 cup fresh chopped parsley (for garnish)

 

Instructions:

 

i. Over medium-high heat, warm the olive oil in a big saucepan or Dutch oven.

ii. Brown the beef stew meat completely before adding it. The meat should be taken out of the saucepan and left aside.

iii. Add the onion and garlic to the same saucepan. Sauté the onion until it turns translucent.

iv. The carrots and celery should start to soften when you add them to the saucepan and simmer for a few minutes.

v. Add the diced tomatoes, beef broth, red wine, thyme, rosemary, salt, and pepper to the saucepan along with the beef once more. To blend, thoroughly stir.

vi. Heat should be turned down once the mixture comes to a boil. Until the meat is cooked, simmer the mixture with the lid on for 1 1/2 to 2 hours.

vii. Season with salt and pepper to taste.

viii. Pour the Italian beef stew into bowls and top with fresh parsley.

ix. For a substantial supper, serve the stew with crusty bread or polenta.
