1. Winter Squash Soup Recipe:

to warm you up on a cold winter day? There is no need to look any further! This
winter squash soup is simple to make and full of flavor. The smooth and creamy
texture of this soup, along with the sweet and earthy flavor of winter squash,
makes it the ideal comfort meal for any chilly evening. Here's how to create it
yourself.
Ingredients:
• 1 big winter squash, peeled,
seeded, and cut into 1-inch cubes (such as butternut, acorn, or pumpkin)
• 2 minced garlic cloves
• 1 big peeled and cubed potato
• 4 cups chicken or veggie broth
• 1 cup heavy cream
• Season with salt and pepper to
taste
Optional toppings: croutons,
chopped parsley, grated Parmesan cheese
Instructions:
1. Sauté the onion and garlic in

Ingredients:
• 2 tbsp olive oil
• 1 big diced onion
• 2 minced garlic cloves
• 2 tablespoons grated ginger
• 4 big carrots, peeled and diced
• 4 cups vegetable or chicken
broth
• 1 can of coconut milk
• 1 teaspoon dried thyme
• 1 teaspoon ground cumin
Optional toppings: chopped
cilantro, plain Greek yogurt
Instructions:
1. Sauté the onion, garlic, and
ginger in the olive oil in a large saucepan over medium heat until softened and
aromatic.
2. Toss in the chopped carrots
and toss to mix. 5 minutes in the oven.
