1.       Winter Squash Soup Recipe:

The smooth and creamy texture of this soup, along with the sweet and earthy flavor of winter squash, makes it the ideal comfort meal for any chilly evening. Here's how to create it yourself.

 

Ingredients:

 

• 1 big winter squash, peeled, seeded, and cut into 1-inch cubes (such as butternut, acorn, or pumpkin)

• 2 minced garlic cloves

• 1 big peeled and cubed potato

• 4 cups chicken or veggie broth

• 1 cup heavy cream

• Season with salt and pepper to taste

Optional toppings: croutons, chopped parsley, grated Parmesan cheese

 

Instructions:

 

1. Sauté the onion and garlic in a little oil in a large saucepan over medium heat until softened and aromatic.

2. To the saucepan, add the cubed winter squash, potato, and broth. Bring to a boil, then lower to low heat and cook for 20 minutes, or until the veggies are soft and tender.

3. Puree the soup with an immersion blender or in a blender until smooth.

4. Stir in the heavy cream and return the soup to the stove. Season to taste with salt and pepper.

• 2 tbsp olive oil

• 1 big diced onion

• 2 minced garlic cloves

• 2 tablespoons grated ginger

• 4 big carrots, peeled and diced

• 4 cups vegetable or chicken broth

• 1 can of coconut milk

• 1 teaspoon dried thyme

• 1 teaspoon ground cumin

Optional toppings: chopped cilantro, plain Greek yogurt

 

Instructions:

 

1. Sauté the onion, garlic, and ginger in the olive oil in a large saucepan over medium heat until softened and aromatic.

2. Toss in the chopped carrots and toss to mix. 5 minutes in the oven.

3. Pour in the broth, coconut milk, thyme, and cumin. Bring to a boil, stirring constantly.

4. Reduce the heat to low and continue to cook, stirring periodically, for about 20 minutes, or until the carrots are soft and tender.

5. Puree the soup with an immersion blender or a normal blender until smooth.

6. Season to taste with salt and pepper.

7. Serve hot, garnished with chopped cilantro and, if wanted, a dollop of Greek yogurt.
