Ingredients:

4 fish fillets (such as salmon or trout)

Salt and black pepper to taste


Instructions:

  • Preheat the grill to medium-high heat.

2. Chicken tikka:

 

The word "tikka" means "bits" or "pieces," and refers to the small pieces of chicken that are used to make this dish. The chicken is marinated in a blend of spices and yogurt and then grilled to perfection.

The origins of chicken tikka can be traced back to the Mughal era in India when the Mughal emperors ruled the northern part of the country. It is said that the dish was invented by the royal chefs of the Mughal court, who were renowned for their culinary skills.

1 tsp cumin powder

1 tsp garam masala powder

Salt to taste

2 tbsp oil

Lemon wedges, for serving

Chopped coriander leaves, for garnish


Instructions:

  • In a large mixing bowl, combine the yogurt, ginger-garlic paste, turmeric powder, red chili powder, coriander powder, cumin powder, garam masala powder, and salt. Mix well to form a smooth paste.
  • Add the chicken pieces to the bowl, and toss to coat them evenly with the marinade. Cover the bowl with plastic wrap, and refrigerate for at least 2 hours, or overnight.
  • Preheat the oven to 400°F.
  • Line a baking sheet with aluminum foil, and brush it with oil.
  • Place the chicken pieces on the baking sheet, leaving some space between them.
  • Bake the chicken in the preheated oven for 15-20 minutes, or until the chicken is cooked through and slightly charred.

  • Heat the olive oil in a large skillet over medium heat.
  • Add the diced onions and sauté for 3-4 minutes until they become translucent.
  • Add the minced garlic and grated ginger and sauté for an additional minute.
  • Add the ground cumin, ground coriander, turmeric, garam masala, and chili powder to the skillet and cook for 1-2 minutes until fragrant.
  • Add the diced tomatoes and vegetable broth to the skillet and stir to combine.
  • Bring the mixture to a simmer and let it cook for 5-7 minutes until it begins to thicken.
  • Add the chickpeas and chopped spinach to the skillet and stir to combine.
  • Season with salt and pepper to taste.
  • Cover the skillet and let the curry simmer for 10-12 minutes until the chickpeas are tender and the spinach has wilted.
  • Serve hot with rice or naan bread.

 

4. Mixed Vegetable Stir Fry:

1 small cauliflower, cut into florets

1 small yellow squash, sliced

1 tablespoon cornstarch

1 teaspoon honey

Salt and pepper, to taste


Instructions:

  • In a large wok or skillet, heat the vegetable oil over medium-high heat.

  • Add the sliced bell peppers, carrot, broccoli, cauliflower, zucchini, and yellow squash to the wok and stir fry for 5-7 minutes until the vegetables are tender-crisp.
  • In a small bowl, whisk together the vegetable broth, soy sauce, cornstarch, and honey until smooth.
  • Pour the sauce over the vegetables and stir fry for another 2-3 minutes until the sauce thickens and coats the vegetables.
  • Season with salt and pepper to taste.
