vi.                 Salt and pepper to taste

1.       Preheat the oven to 375°F (190°C).

xi.                  2 tablespoons capers

xii.                2 tablespoons chopped fresh parsley

 

Cooking Procedure:

 

1.       In a shallow dish, mix the flour, salt, and pepper. In another shallow dish, beat the eggs. In a third shallow dish, place the breadcrumbs.

2.       Dip each pork medallion first in the flour mixture, then the beaten eggs, and finally the breadcrumbs. Set aside.

3.       In a large skillet, heat the olive oil and butter over medium heat.
