Ingredients:

 

• 1 liter of red wine

• 1 cup water • 1/2 cup brown sugar

• 2 cinnamon sticks • 4 whole cloves • 4 whole star anise • 1 sliced orange • 1 sliced lemon

 

Instructions:

 

1.       Combine the red wine, water, brown sugar, cinnamon sticks, cloves, and star anise in a big pot. Stir until the sugar is completely dissolved.

2.       Add the orange and lemon slices to the pan.

3.       Cook over low heat until the mixture begins to boil. Do not allow it to come to a boil.

4.       Reduce the heat to low and continue to cook for 15-20 minutes, or until the flavors have fully established.

5.       To remove the spices and citrus slices, strain the mixture through a fine-mesh sieve.

6.       If desired, top the mulled wine with more cinnamon sticks and citrus slices.

Ingredients:

 

• 2 tablespoons olive oil • 1 diced onion

• 2 sliced carrots

• 2 celery stalks, diced

• 3 garlic cloves, minced

• 4 cups vegetable broth

• 2 cans diced tomatoes

• 1 cup dried pasta (such as ditalini or elbow macaroni)

• 1 cup cooked beans (such as cannellini or kidney beans)

• 1 cup chopped kale or spinach

• Salt and pepper to taste

• Grated Parmesan cheese, for serving (optional)

 

Instructions:

 

1.       Warm the olive oil in a big pot over medium heat.

2.       Cook the onion, carrots, and celery in the pot for 5-7 minutes, or until the vegetables are tender.

3.       Cook for another minute after adding the minced garlic.

4.       To the pot, add the veggie broth, diced tomatoes, pasta, beans, and kale or spinach. To blend, stir everything together.

5.       Bring the soup to a boil, then reduce to low heat and continue to cook for 20-30 minutes, or until the pasta is soft and the flavors have fully established.

6.       Season the soup to taste with salt and pepper.

7.       If preferred, garnish the minestrone with grated Parmesan cheese.
