12. 4 cup water

13. Season with salt to taste

14. Garnish with fresh cilantro

 

Instructions:

 

i. Cut the eggplants into tiny pieces and season them with salt. Allow them to soak for 10-15 minutes to eliminate any bitterness before rinsing and patting dry.

ii. To create the sauce, combine soy sauce, rice vinegar, sugar, corn flour, and water in a small bowl.

iii. Heat the oil in a wok or big pan over medium-high heat. Stir in the garlic, ginger, and dried chili peppers for 1-2 minutes, or until fragrant.

iv. Add the eggplant to the wok and stir-fry for 5-6 minutes, or until it is cooked through and soft.

v. Stir in the bell peppers for another 2-3 minutes.

vi. Pour the sauce over the eggplant and peppers and continue to stir-fry for another minute, or until the sauce thickens and covers the veggies.

vii. Serve hot with rice and garnished with fresh cilantro.

i. Prepare the egg noodles according to package directions. Set aside after draining.

ii. Cook the ground pork in a large pan over medium-high heat until browned and cooked through.

iii. Add the garlic and ginger to the pan and cook for 1-2 minutes, or until fragrant.

iv. To create the sauce, mix soy sauce, rice vinegar, chili oil, Sichuan peppercorns, sugar, and chicken stock in a small dish.

v. Pour in the sauce and bring to a simmer in the pan.

vi. Add the cooked noodles to the skillet and stir to coat with the sauce.

vii. Garnish with sliced green onions and cilantro, if desired.
